Classic recipe with onions and potatoes

A traditional Russian recipe, which is an excellent second course for breakfast, lunch or dinner. For cooking, take fresh, dried or pickled mushrooms. A combination of fresh mushrooms and new potatoes will be tasty and healthy.

Ingredients:
  • Potato, 600-700 g;
  • Champignons, 400 g;
  • Onion, 2 heads;
  • 1-2 cloves of garlic;
  • Half a glass of sour cream;
  • Sunflower oil;
  • Dill and parsley.
Cooking:

Rinse the mushrooms and remove the gray skin, cut into a medium-sized cube and fry in a heated pan with the addition of sunflower oil, seasoning with salt and pepper to taste. Wait until all the liquid has evaporated during the heat treatment.

Cut the onions into half rings and fry in a pan with the addition of chopped garlic. Cut the peeled potatoes into cubes, salt and fry in a hot pan until a golden crust forms. When potatoes are ready, add champignons with onions and garlic to the pan, mix, put sour cream on top, cover and simmer for another 3-5 minutes. Serve the dish hot, sprinkled with chopped parsley and dill.

Puff Chicken Salad

The salad recipe (about 6 servings for a large salad bowl) is very simple, but once you cook it and taste it, you will remember its refined taste and aroma. The dish will be the perfect complement to the festive table.

Ingredients:

  • Potatoes, 3-4 pcs.;
  • 4 eggs;
  • Champignons, 500 g;
  • Onions, 1 pc.;
  • Smoked Chicken Breast, 400 g;
  • Hard cheese, 150 g;
  • Mayonnaise;
  • Salt to taste.
Cooking:

Cook, cool and peel potatoes and eggs in advance. Rinse the champignons, chop with a medium cube, salt and fry in a pan along with chopped (cube or half rings) onions until fully cooked. Smoked chicken breast cut into a medium dice. When the preparation is completed, proceed to the formation of layers of salad, greasing each with mayonnaise:

  • 1st layer: grated on a fine grater, boiled potatoes (it is thanks to him that the salad will be airy)
  • 2nd layer: fried mushrooms with onions
  • 3rd layer: chopped chicken breast
  • 4th layer: chicken eggs grated on a fine grater
  • 5th layer: hard cheese, grated

Do not apply mayonnaise on the last coat. Garnish the top of the salad with basil leaves and parsley.

Quiche "Loren" with champignons and feta cheese

Test Ingredient:

  • Butter - 100 g;
  • Flour - 1 glass;
  • Cold water - 3 tbsp. spoons;
  • A pinch of salt.

Ingredient for the filling:

  • Brynza - 100 g;
  • Champignons - 500 g;
  • Onions - 1 pc.;
  • Salt, pepper, coriander to taste;
  • Butter for frying.

Ingredient for pouring:

  • Hard cheese - 100 g;
  • Cream 33% - 250 ml;
  • Eggs 2-3 pcs.;
  • Spices to taste.

How to cook:

  1. Prepare the dough in advance and refrigerate for several hours. For the test, sift the flour, add salt to it and grind with chilled butter. Add cold water to the mixture and knead the dough. Wrap it in cling film and put in the refrigerator.
  2. Prepare the filling. Rinse the mushrooms, remove the top film from the hats, cut into cubes or slices. Finely chop the onion and fry the mushrooms in a pan with the addition of butter. After the juice generated by frying, evaporate, add salt, pepper and coriander to taste. Cool and add finely chopped feta cheese.
  3. Remove the dough from the refrigerator, roll it with a rolling pin to a thickness of 5-7 mm, put it in a round shape, form the sides and cut the excess in a circle. Pierce through with a toothpick or fork, cover with parchment paper, on which you put the load, put the dough in the oven for 15 minutes at a temperature of 150-180 degrees. Baking with a load is necessary so that the dough does not swell.
  4. To fill, beat eggs with a whisk, add cream and grated cheese and spices to taste.
  5. Put the filling from champignons and feta cheese on the basis of the dough, pour the egg-cream mass on top, send to the oven for 20-25 minutes until golden brown.

Deep Fried Champignon with Garlic Sauce

To prepare a hot snack, you will need quite ordinary products.

Ingredients:

  • Champignons medium, 15-20 pcs.;
  • Breadcrumbs;
  • Egg - 2 pcs.;
  • Refined sunflower oil;
  • Salt, pepper to taste;
  • Mayonnaise or sour cream - 150 g;
  • Garlic - 2 cloves;
  • Dried Dill, Basil.
Cooking:

Rinse the mushrooms and dry on a paper towel. Heat deep-frying sunflower oil in a saucepan. Beat eggs, add salt, pepper. Fry the mushrooms in deep fat until golden, after dipping in the egg and breadcrumbs. For the sauce, mix mayonnaise or sour cream with chopped garlic and herbs, add a pinch of salt.

Champignons cannot be spoiled, they are easy to prepare, but to make the dishes more tender and fragrant, we will reveal some interesting secrets.

  1. Before frying, the mushrooms must be thoroughly washed under running water so that dirt and sand do not get into the finished dish. We do not recommend soaking them in water, they absorb excess moisture, become even more watery and lose their unique flavor.
  2. Mushrooms in the dish will become more tender if the top film is removed from their hats.
  3. Chopped mushrooms darken quickly. In order to prevent this, immediately start frying them after slicing.
  4. Mushrooms are cooked for no more than 10 minutes in a pan. To get a delicious golden crust, first evaporate all the liquid, and then add spices. To speed up the frying process, drain the liquid without waiting for evaporation.
  5. To enhance aroma and expressive taste, combine mushrooms with spices: garlic, thyme, rosemary, nutmeg, parsley or dill.
